Colbergcoffee is a small-batch specialty coffee roastery and online shop. We roast in Pławęcino, a village near Kołobrzeg (historically Colberg) on the Polish Baltic coast, and orders are sent out from the roastery itself. Under our own name you will find single origins, our own blends, whole bean and ground coffee.

Who roasts your coffee

We have been doing this as a family since 2018. Samuel chooses the green coffee and sets the roast profiles. Zuzanna runs our café and our communication. Estera looks after the visual side of the brand.

Green coffee: what we buy

Roasting can only bring out what is already in the green bean, so selection comes first. Specialty quality starts at the farm and with the way the cherry is processed, and it ends with what you taste in the cup. Every single origin in our range scores 82 points or more on the SCA scale, and each listing states the origin, the process and the tasting notes.

The range covers both directions: balanced profiles for espresso and moka pots, and lighter, more aromatic lots for pour-over and filter.

How we roast

We roast on a traditional drum roaster, in small batches, following the development of the bean and the flavour profile we are aiming for. Straight after the roast the beans are cooled, then packed in sealed bags, so the aroma stays in the coffee until you open it.

Keeping the profile repeatable

Consistency is the part of roasting that customers notice only when it fails. Small batches let us control each roast rather than average it out, and we work to the same profile every time a coffee comes round again. The 82-point floor on single origins keeps the raw material inside a known range.

What freshly roasted means here

Light roast batches carry the roast date in the product description, so you can see how fresh a bag is before you order. We dispatch 95% of parcels within 24 hours, straight from the roastery.

Whole beans hold their aroma far better than ground coffee, so grind as close to brewing as you can. We also sell the same coffees ready ground for a chosen brew method.

Espresso or filter: which profile to pick

Espresso rewards balanced, stable profiles. Filter shows more aroma and more detail, including the acidity and the fruit that espresso tends to compress. If you want a classic cup, start with our espresso coffees. If you prefer brighter notes and more fruit, look at filter coffees and single origins.
