The coffee is decaffeinated with water (Water Processed Decaffeinated), without any chemicals. The beans are gently steamed and soaked in clean water, which washes out the caffeine while keeping the natural oils and sugars. That is why El Tucan Decaf keeps its full aroma and clean flavour. The method is harder and more expensive, but the result is worth every drop: the coffee stays juicy, smooth and balanced.
As green coffee the beans are already slightly brownish, which makes them a real challenge for the roaster. They roast faster, and you have to watch them like a hawk not to miss the right moment. That difficulty is exactly why a well-roasted decaf shows the roaster’s skill.

This coffee has a story as well as flavour. El Tucan is produced far away in Mexico, in the Chiapas region, where coffee farms stretch across the scenic hills of the Aztecs. Local producers join small cooperatives (like the well-known GRAPOS group) to improve growing and processing together. The harvested coffee cherries are carefully dried (fully washed method) and sorted, with every stage closely controlled. That way only top-quality beans, ready for roasting, end up in your bag.

How to brew El Tucan Decaf
It is great as espresso, but works just as well in pour-over, Chemex, French press or classic Polish-style coffee (ground coffee steeped in a glass).
To get the most flavour out of it in a V60, use:
