The PID drives the heating elements and talks to the machine’s software, so the parameters stay steady even after hours of continuous work.

Thanks to the digital PID we could test very different coffees, from dark roast blends for classic espresso to light, fruity single origins. In every case the Raptor Izensso repeated the flavour and aroma. This is the kind of system specialty cafés want, where quality cannot be left to chance.

Comfort matters when you are on the bar all day. The Raptor Izensso carries two 4 inch touchscreens, so each group can be set independently. Shot time, temperature and pre-infusion length are all adjustable to the point, and the screens show the parameters live, which gives you full control of the process.

You can also save brewing profiles, so every coffee gets its own settings. That is particularly useful in venues running more than one coffee at a time, say a classic espresso alongside a light roast for filter style drinks.

Espresso and milk on the Izensso Raptor

Testing showed the Izensso espresso machine handles espresso well. An Italian rotary pump holds a steady 9 bar and metal flowmeters keep the dosing precise. The result: espresso with thick, creamy crema and repeatable flavour cup after cup.

The Raptor does not let you down on milk drinks either. The four-hole steam tips spread the steam evenly, so the milk comes out silky and glossy. That is the right base for cappuccino and latte art, which the baristas who worked on this model confirm.

Most manufacturers concentrate on coffee alone. The Raptor Izensso stands out with a separate programme for brewing tea: five temperature levels and a six-stage extraction. Every cycle opens with a 3 second pre-infusion that wets the leaves before brewing proper.

During testing we brewed green, black and white tea, and in each case the parameters could be set so that the infusion had full flavour and aroma. It is a function that makes the Raptor a fit for venues built around high quality drinks generally, not only cafés.

Ergonomics and everyday work with the Raptor

The Raptor Izensso is built for daily use under pressure. Automatic cleaning programmes save time, an energy saving mode keeps costs down, and service notifications remind you when maintenance is due.

Worth adding that the groups sit fairly high, which makes large drinks in 300 to 400 ml cups easy. With small cups it takes a bit of practice to avoid splashing. After a few days that stops being a problem at all.
