How to brew Brazil Mogiana
For espresso, we suggest starting with a ratio of about 18 g of coffee to 36-40 g in the cup and a shot time of around 25-30 seconds. If the coffee tastes too bitter, grind a little coarser. If it tastes thin or sourish, grind finer.
For a moka pot, choose a grind finer than for filter, but not as fine as for espresso. Do not tamp the coffee in the filter basket. Brew over a low heat and take the moka pot off the heat when the coffee starts to flow steadily into the top chamber.
For filter, you can start with a ratio of 6 g of coffee per 100 ml of water. Water at around 92-94°C and a medium grind work best. If you want to bring out more sweetness, shorten the brew time slightly or use a slightly coarser grind.
