The La Marzocco Strada X espresso machine is a two-group machine for cafés, roasteries and labs that genuinely work with advanced espresso recipes. Mass-based profiling, Smart Saturation and independent pumps and boilers give much wider control over extraction than a classic AV machine. It is the top La Marzocco model in the Colbergcoffee range, but its price is only justified if the team will use the profiling features regularly.

What is mass-based profiling?
In typical pressure profiling, the stages of extraction are tied to a set curve and to time. The machine delivers the set pressure, but a pressure reading on its own does not tell you how much espresso has reached the cup.
Mass-based profiling uses built-in scales and treats beverage weight as information about how far the extraction has progressed. The system adjusts the flow automatically to keep brewing on the programmed profile even when the coffee offers slightly different resistance. This lets you link parameter changes to a specific stage of the yield rather than only to the number of seconds since the pump started.
Profiling by weight will not fix the wrong grind size, uneven distribution or an incorrect dose. Its job is to reproduce a deliberately developed recipe more accurately, so it adds most value for a team that regularly weighs coffee, tastes the results and records extraction parameters.
Smart Saturation and fully independent groups
Smart Saturation automates pre-infusion based on the back-pressure that builds up in the coffee puck. Instead of always wetting the coffee for the same length of time, the machine responds to how saturation actually progresses and picks the moment to move on to the rest of the extraction.
Each group has its own boiler and pump, so it can run its own temperature, pressure and extraction curve. You can make classic espresso on one group and work with a profile designed for a different coffee on the other. PID control of temperature and pressure helps hold the saved settings shot after shot.
The brew boilers have a combined capacity of 2.6 l, and the steam boiler holds 8.2 l. Pro Touch steam wands limit how hot the surface gets, which improves barista safety and makes cleaning after steaming milk easier.
Manual, profile and AV modes
The Strada X offers three ways to run an extraction. Manual mode leaves the decisions to the barista, profile mode follows a prepared curve, and AV is for consistent brewing without controlling each stage by hand. This means one machine can handle both everyday service and work on new recipes.
Straight In portafilters lock straight into the group without a twisting motion. This shortens a task that is repeated all day and reduces strain on the wrist, which matters over a long shift. Built-in scales mean you can work without placing a separate device under every cup.
The three modes are only useful if the venue clearly sets out how they will be used. If every barista works only in AV with a single recipe, much of what the Strada X can do will go unused.
Strada X or Strada S ABR: what does the extra cost pay for?
The Strada S ABR is 113,191.32 zł gross and already offers built-in scales, stopping the extraction at a target weight, programmable doses and independent temperature for each group. For a café that mainly needs consistent espresso across baristas, that may be entirely enough.
The La Marzocco Strada X is 146,772.12 zł gross, which is 33,580.80 zł more. The extra cost mainly covers mass-based profiling, automatic flow adjustment, Smart Saturation, independent pumps, user-defined pressure curves, three operating modes and the Straight In system.
If the venue does not plan to build separate profiles for different coffees, run training or analyse extractions regularly, the extra cost over the Strada S has no practical justification. If a fast workflow during busy periods is the priority, it is also worth comparing the Strada X with the KB90 AV ABR at 99,039.60 zł gross.
When does the La Marzocco Strada X espresso machine pay for itself?
The Strada X will not pay for itself just by making more coffees. Its advantage is not having two groups, since cheaper models have those too, but the ability to build and repeat advanced profiles for specific beans.
The investment makes sense in a specialty coffee shop with a rotating espresso menu, a roastery testing coffees, a training centre, or a venue where the extraction profile is part of what the guest is buying. To judge the payback, set the difference of 33,580.80 zł against the real additional revenue from recipes, training or a menu that could not be run on the Strada S.
If most sales are standard milk drinks made with a single blend, and the team does not analyse curves or update recipes, it is more sensible to spend the price difference on grinders, water treatment, barista training or the layout of the station.
The Strada X is 83 cm wide, 69 cm deep and 50 cm high, and weighs 94 kg. Power ranges from 4,800 to 5,666 W, and the power supply options are 200 V, 220 V and 380 V, single-phase or three-phase. Weight, depth and electrical requirements should be taken into account at the bar design stage.
