The Victoria Arduino Mythos MY75 HS High Speed is a professional electric espresso grinder, intended mainly for cafés working under heavy load. The High Speed version shortens grinding time per dose compared with the standard MY75, helping the barista keep up with a queue. The grinder combines 75 mm flat burrs, Clima Pro technology, the DDD system and time-based dosing with touchscreen control.

Victoria Arduino Mythos MY75 HS: what does High Speed mean?
The High Speed name marks a version that shortens the time needed to grind a dose compared with the standard Mythos MY75. The barista waits less for the grounds, so the next espresso can start sooner and orders move faster at peak times.
The manufacturer does not publish an exact grinding speed for the MY75 HS, so it should not be given a figure in grams per second. The confirmed difference is a shorter grinding time per dose than the standard MY75, not a specific stated output.
Clima Pro, DDD and 75 mm burrs in daily work
The 75 mm flat burrs are mounted vertically, which shortens the path of the ground coffee and helps stop it building up inside the grinder. Low retention reduces the amount of stale grounds ending up in the next dose and cuts coffee waste when adjusting.
Clima Pro technology stabilises the temperature of the grinding chamber. This matters especially during busy service, when temperature changes could affect how the grounds behave and force extra adjustments.
The DDD function uses an electronic sensor that reads the actual distance between the burrs. The barista gets more precise information about the grinder setting, which makes changes easier to control and previous settings easier to return to.
Time-based dosing and up to 3 saved grinding programmes let you set up different doses. The touchscreen makes it easy to select a programme and make changes without breaking your workflow at the espresso machine.
For which venue is the Mythos MY75 HS worth the extra cost?
The High Speed version matters most in a café that makes a lot of espresso in a short time. Saving a moment on each dose becomes noticeable when the grinder runs almost non-stop and orders are waiting for coffee to be ground.
Choose the MY75 HS when standard grinding time becomes one of the bottlenecks at the barista station. This applies to venues with busy peak hours, high sales of milk drinks and stations where one grinder handles the main espresso coffee.
In a quiet or moderately busy café the standard MY75 may be enough, as it offers the same burr size, Clima Pro, DDD and touchscreen. The extra cost of the HS version is justified mainly by service speed, not by a need for a different grind profile.
