The Victoria Arduino Mythos MY75 is a professional burr grinder for espresso, designed for cafés, restaurants and other venues handling a lot of orders. 75 mm flat burrs, a grinding speed of 3 g/s and time-based dosing let you prepare consistent doses quickly. Clima Pro stabilises the temperature of the grinding chamber, DDD lets you monitor the actual burr gap, and the vertical burr layout helps keep retention low.

Victoria Arduino Mythos MY75 for professional espresso
The Mythos MY75 was designed for work behind an espresso bar, where speed, consistency and easy setting changes count. It offers up to three grinding programmes, time-based dosing and a touchscreen from which the barista can control the key settings.
Grinding speed is 3 g/s. That means a standard 18 g dose takes a nominal 6 seconds or so, although the actual time depends on the coffee used and the grind size, among other things.
Mythos was the official grinder of the World Barista Championship in 2022-2025. The MY75 uses solutions developed for heavy use in professional coffee bars, not just for making the occasional espresso.
How do Clima Pro and DDD help with consistency?
During busy service, successive doses and a running motor can affect the temperature of the grinding chamber. Clima Pro technology stabilises that temperature, limiting changes in grinding conditions between quieter hours and a rush at the bar.
DDD is an electronic sensor that reads the actual burr gap. The barista gets more precise information about the burr setting, which makes adjustments easier to control and previous settings easier to return to.
The MY75 doses by set time, so dose weight should be checked on a scale from time to time. Clima Pro and DDD help keep conditions stable, but they do not replace checking the espresso recipe.
Low retention at peak times
Vertical burrs and the design of the grinding chamber reduce the amount of coffee left inside the grinder. After a setting change or a change of beans, less coffee ground to the old parameters ends up in the next dose. That makes it quicker to correct the espresso and helps cut waste from purging the grinder with extra coffee.
The Victoria Arduino Mythos MY75 can be used with professional espresso machines from different manufacturers. It will make the most of its potential alongside a one- or two-group espresso machine in a café, restaurant or bakery with steady sales of espresso-based drinks. The grinder is a standalone unit, so choose it above all according to the number of coffees you make, the layout of the station and how you want to control the dose.
MY75, MY85 or MYG75: which version should you choose?
The MY75 has 75 mm flat burrs, a grinding speed of 3 g/s and time-based dosing. It is the right version for a venue that needs an efficient espresso grinder but does not require automatic weighing of every dose.
The MY85 uses 85 mm burrs and grinds at 4.5 g/s. It is worth choosing for a very high number of orders, when a shorter preparation time per dose makes a real difference to bar throughput.
The MYG75 is the gravimetric version that weighs every dose as it grinds. It is the better solution if controlling dose weight is the priority and you do not want to rely only on grinding time. The MY75 remains the simpler choice for a barista who regularly checks doses on an external scale.
