Syrenka restaurant in Kołobrzeg serves Polish food in the town centre, at ul. Zwycięzców 11. It stands where the Syrena bar operated for 30 years. The restaurant describes itself as “a modern milk bar with the soul of traditional cooking”. The menu has hand-made pierogi, pork schnitzel, pickled cucumber soup and kompot. With lunch you can order Syrenka coffee, which is our Brazil Guaxupé, roasted and packed for the restaurant at our roastery. It is brewed on a Nuova Simonelli Appia Life XT espresso machine. Syrenka is our customer: we supply its coffee and equipment, so we know the place well.

Syrenka coffee from our roastery: Brazil Guaxupé

We roast Syrenka’s coffee at Colbergcoffee and pack it in bags with the restaurant’s logo. The navy label shows a mermaid and the words “Kawa 100% arabica”. Inside is Brazil Guaxupé: 100% arabica from Minas Gerais, natural process, medium roast. It is the coffee Syrenka serves every day in espresso, cappuccino and latte. On its menu the restaurant calls it its own house coffee.

In the cup it is sweet, with natural chocolate notes and low acidity. The natural process, drying the beans inside the whole coffee cherries, gives it its sweetness, and the medium roast brings out the chocolate. It works well as a straight espresso and with milk.

You can buy a bag of Syrenka coffee on site, as whole beans. It makes a good gift from Kołobrzeg or a souvenir of your visit to Syrenka, and at home you can brew the same coffee you had with lunch. For the restaurant it is an extra product to sell.

At Syrenka you will also find Kołobrzeski Sad juices, hand-pressed in Kołobrzeg and bottled under the Kołobrzeski Sad & Syrenka label: apple, orange and mixed fruit. Syrenka is also developing its own preserves. In Syrenka’s pantry, a glass-front fridge in the dining room, jars of preserves stand next to the juice bottles.

Espresso and cappuccino from the Appia Life XT

Behind the bar works a white, 2-group Nuova Simonelli Appia Life XT in the volumetric version. It has 5 programmable dose buttons on each group and a TFT display. The machine measures the water itself, which makes consistent work easier. The taste of the espresso still depends on the grinder setting, the dose and the tamping. Two groups allow two extractions at once, when several tables order coffee at the same time after lunch.

The coffee is ground by a Eureka Olympus 75 Neo grinder with 75 mm flat burrs and micrometric grind adjustment. It grinds on demand, one dose for each portafilter.

We supplied both the espresso machine and the hot water boiler, and we also service the espresso machine. In October 2026 it had been working at Syrenka for a year and a half. It passed its first technical inspection without any issues. We write more about this installation in the article Syrenka and the Appia Life XT (in Polish).

Next to the espresso machine stands a silver Flow.Care HS25 hot water boiler. It is a separate source of hot water, for example for tea. Staff do not have to use the hot water tap on the espresso machine, which makes work easier when there are more orders.

Water for the espresso machine goes through a BRITA filter. The filter limits limescale build-up in the boiler and helps keep the water parameters stable. We replace the cartridges ourselves when they are due, so the restaurant does not have to keep track of the dates.

According to the October 2026 menu, an espresso costs PLN 8, a cappuccino and a flat white PLN 16 each, and a latte PLN 18. There are also cold coffees, for example espresso tonic with passion fruit or iced latte with vanilla ice cream.
