Fat Thursday is almost here, and in Kołobrzeg that means proper doughnuts, the kind that actually taste of something rather than just filling you up. At Colbergcoffee we do things the craft way. No production line, just what we make ourselves, with care and with a plan.

What makes these doughnuts craft and handmade?

Craft isn’t just a word on the label. For us it means something concrete:

  • Small batches: we make as much as we can do well and fresh on the day.
  • Made by hand: we knead, shape, fill and decorate the dough ourselves. Every one comes out a little different, because a person made it, not a machine.
  • No ready-made mixes: zero all-in-one powders. We make the dough from scratch, to a recipe we trust.
  • Real ingredients: real butter, fresh eggs, fresh fruit, good quality chocolate and pastes, real vanilla, not flavourings.

That’s what makes a doughnut here different from one out of a big chain: it has character, flavour and texture you can taste from the first bite.

What doughnuts does Colbergcoffee in Kołobrzeg have this year

This year for Fat Thursday we’ve put together a proper range of flavours, from the classics to the more adventurous. Everything is fresh, made on site, in limited quantities. First come, first served.

Here’s this year’s line-up:

  • Raspberry, 17 zł: intense, tart raspberry jam in a light yeast dough. A classic that always wins.
  • Nutella, 17 zł: real Nutella, thick, chocolate-hazelnut, oozing out on the first bite. No compromises.
  • Krówka, 17 zł: sweet, buttery krówka fudge filling (a Polish milk fudge), childhood flavour at its best.
  • Rose, 16 zł: a delicate, fragrant rose petal jam. Elegant and subtle.
  • Lotus, 18 zł: a Lotus Biscoff caramel cream, sweet, biscuity, moreish.
  • Pistachio and raspberry, 20 zł: this season’s hit, a rich pistachio cream with raspberry.
  • Dubai, 20 zł: the classic Dubai-style filling, pistachio, kataifi and chocolate. Luxury in a doughnut.

The flavours are firmly seasonal. Pistachio with raspberry and the Dubai-style one are this year’s stars, because pistachio and raspberry are simply made for each other. Stock runs out fast, so come early.

Which coffee pairs best with a doughnut?

A craft doughnut works best with a coffee that either balances the sweetness or plays it up. Here are our favourite pairings for Fat Thursday:

If you like bold, intense flavours, we’d recommend Jeremii Blend. It’s our dark roast blend with notes of dark chocolate, dark fruit and a light, bitter cocoa finish. It cuts nicely through the sweetness of the Dubai, Lotus or Nutella doughnuts: the doughnut ends up feeling more refined, and the coffee doesn’t disappear into the background.

If you’d rather have something sweeter and creamier, reach for Guatemala Huehuetenango. It’s a delicate, medium roast with clear notes of caramel, plum, milk chocolate and maple syrup. It lifts the krówka, Lotus Biscoff and pistachio sweetness: the whole thing tastes like a dessert in a cup and on a plate at the same time.

And if you’re after contrast and lightness, Kenya Masai as filter coffee is a great shot. It’s light roast, juicy, with raspberry, blackcurrant, citrus and floral sweetness. Its bright, fruity acidity cleans the palate nicely after a rich doughnut, especially the raspberry, pistachio and raspberry, or rose ones. Ideal if you want to feel like you ate a doughnut, not the other way round.

Handmade doughnuts from real ingredients: a premium bakery

Why choose ours over mass-produced ones? Because we spend where others cut corners.

  • Instead of margarine or palm oil, real butter. The dough ends up more aromatic and tender for it.
  • Fillings? The real thing: jams made from actual fruit (no glucose-fructose syrup), pistachio paste that’s 100% pistachio, Nutella straight from the jar, not a cheap imitation.
  • No improvers, artificial colours or preservatives. We don’t extend the shelf life at the cost of flavour.
  • Fresh for the day: we fry in the morning and fill just before opening. By evening they’re gone, and that’s exactly how it should be, since a doughnut the next day is never quite the same.

Do I need to reserve doughnuts?

No, we don’t take reservations. First come, first served. The most popular flavours (Dubai, pistachio and raspberry) sell out fastest, so it’s best to come just after 9am.
