Appia Viva, the new professional espresso machine from Nuova Simonelli, puts classic Italian looks together with current technology. The Italian manufacturer presented it on 14 October 2025 as the successor to the well regarded Appia Life series. The new generation is meant to raise the standard of the coffee, simplify the barista’s job and get customers served faster. It is built for medium volume venues that want high output without a complicated machine.
Appia Viva: style and output in any café
A redesigned interface and better interaction between barista and machine give a café more energy, more style and more throughput. Even less experienced staff can turn out drinks at a consistent standard, which matters in chains and in any venue with high staff turnover. Nuova Simonelli also designed the Appia Viva as a machine for roasteries and larger businesses that care about quality, repeatability and sustainability.
The technology inside the Simonelli Appia Viva
The Nuova Simonelli Appia Viva delivers solid output, repeatable results and real energy savings. The Soft Infusion System (SIS) optimises extraction, which means fuller flavour and stable pressure. Then there is E-Milk, automatic milk steaming for dairy and plant-based drinks alike, with up to four recipes you can programme. For a café that wants its milk drinks to taste the same every time, that is a genuinely useful feature.
Automation in the Appia Viva and a smoother workflow
The Appia Viva can be specified with C-Automation, which syncs the machine with the grinder. Workflow gets smoother and less coffee goes in the bin. The system watches the extraction in real time and puts grind adjustment prompts straight onto the grinder display. Every part of the machine, from the redesigned ergonomic keypad to the touchscreen on the XT version, is there to make the barista’s work simpler, more precise and quicker.
The Viva Grinder talks to the machine
Alongside the Appia Viva, Nuova Simonelli launched the Viva Grinder, built to pair with it. It comes with 65 mm or 75 mm burrs and micrometric grind adjustment, so every dose is precise and repeatable. The body is stainless steel: durable, easy to clean and undemanding to maintain even under heavy use. Linked through C-Automation, machine and grinder become one workstation. The grinder reads the extraction and shows grind corrections on its own screen so that every cup holds the standard.
Energy use and sustainability
Energy efficiency clearly mattered to the designers. An insulated boiler and a reworked hydraulic circuit mean the new model uses around 7% less energy than the previous generation, the Appia Life. That is lower running costs for the venue and a smaller footprint, with no drop in the quality of the coffee.
Versions of the Appia Viva and where it launched
The machine comes in two main variants, Appia Viva XT and Appia Viva Standard. The XT has a touchscreen and is available as a two or three group with built-in volumetric dosing. The Standard covers one, two and three group models, including a Compact version only 55 cm wide for venues short on space. Standard models come as semi-automatic or volumetric, so owners can pick the configuration that suits them. Every version is designed for maximum reliability and repeatable extraction quality, whichever specification you choose.
The Appia Viva and the Viva Grinder are being shown for the first time at HOST Milano 2025. The machine is aimed at café chains that want to raise drink quality while using less energy and less coffee, which is where the industry is heading.
