Until recently oat drink ruled the specialty bar. Now a new arrival is starting to challenge it: pea milk, which is winning over baristas and the cups in front of guests. That is no surprise, because DRYK Pea Barista, the one we pour at Colbergcoffee, genuinely changes things.
What sets pea milk apart?
“Pea” may not sound appetising next to coffee, but modern processing and a carefully built recipe are the reason pea barista drink is becoming a favourite behind bars worldwide.
Excellent foaming and a stable microfoam
DRYK Pea Barista steams beautifully, holding its structure and stability even through the finest latte art. Baristas no longer have to choose between a plant-based option and the look of the drink.

Neutral, balanced flavour
What we value most is the soft, creamy taste that sits under the coffee instead of taking it over, lifting the flavour rather than covering it. That is a clear advantage over soya, which can be too assertive, and over oat, which is sometimes too sweet or too cereal-like.
No gluten, no lactose, no common allergens
DRYK suits anyone with an intolerance or on a plant-based diet:
100% plant-based, lactose free
gluten free
fortified with calcium and vitamins D3, B12 and riboflavin
The environmental side
The environment counts here, and this is where pea has a real advantage. Growing peas:
uses less water than oats, soya or almonds
helps regenerate soil and benefits biodiversity
leaves a low carbon footprint
The peas used in DRYK come from France and the drink itself is produced in Sweden. That means a shorter supply chain and quality that stays under control from field to cup.

DRYK Pea Barista, recognised internationally
There is a reason this drink won Best New Product at World of Coffee 2024 in Copenhagen. The judges picked out its versatility, its yield and the quality of the foam, all of which you notice the moment you pick up a cappuccino at Colbergcoffee.
Will pea milk take over specialty coffee?
Not overnight, but everything points to this being the start of a bigger shift rather than a passing trend. Guests ask for plant-based options more and more often, and at the same time they expect the milk and the specialty coffee to be excellent. DRYK Pea Barista does both.

We have tested a lot of milks, and it makes a difference
We want every coffee to taste good, whether it is made with dairy, oat or pea. We have worked through plenty of plant-based alternatives, and DRYK Pea Barista stands out for its consistency, its neutrality and the way it balances the notes in the coffee. You do not have to be vegan to fall for it.

Specialty standards are changing
The way specialty coffee is assessed has not stood still. In 2024 the SCA replaced the 2004 cupping form with the Coffee Value Assessment, and the 80-point threshold stopped being the definition. We set out what that means in practice in Specialty coffee: what it means now that 80 points is no longer enough.
