Ma Ma Cafe in Świnoujście is a café we fitted out from A to Z. We chose the espresso machine, grinder, water filtration and barista accessories, then installed the equipment and trained the team. The coffee comes from us too, from our roastery near Kołobrzeg. The owner has been baking cakes and putting together dessert tables for years, and today she serves her bakes with coffee from a white Nuova Simonelli Appia Life Compact. From custom cakes and dessert tables to her own café

The owner of Ma Ma Cafe is a passionate baker. For years she has made custom cakes and dessert tables. Her bakes get great reviews, and many customers keep coming back.

She makes the cakes and dessert tables under the Mama Piecze brand. Mama Piecze also sells coffee gift packs, so a sweet gift is easy to pair with a bag of beans.

The next step was a café of her own: a place to eat dessert on the spot, with good coffee. That is the idea she brought to us. For us it was clear from the start: in a place built on baking, the coffee has to match the cakes in the display.

Inside Ma Ma Cafe: pink, orange and plenty of light

A ceiling in a pink and orange check, ball lamps in orange and white stripes and a round ceiling light with a wavy neon. The tables stand on pink turned legs, next to orange bentwood chairs and a bench with checked cushions. Large windows let in plenty of daylight.

The menu is written in pink letters on the glass, with shelves of whole bean coffee next to it. The bar has curved wooden fronts with an orange plinth. The espresso machine is on full view here, so its looks mattered from the first conversation.

How we chose the café’s espresso machine: Nuova Simonelli Appia Life Compact

Three things mattered: space on the bar, capacity and looks. The café is small, and the machine shares the bar with the dessert display and the grinder. That is why we went for the Nuova Simonelli Appia Life Compact: two groups in a body 554 mm wide, with a 7.5 l boiler. Two groups let the team work on both stations at once when a queue builds up at the bar.

Before the decision was made, our specialist took the owner to a working café that runs the same machine. She saw it live, during the baristas’ everyday work. A visit like that tells you more than a catalogue. You can see how much space the machine takes, how fast it turns out coffee and how the steam wand handles milk.

We chose the white version. It suits the light worktops and the pink and orange interior, and design is one of the strengths of the Appia range. It is the volumetric version (Volumetric): the water volume is programmed, which makes consistent espresso easier. A full fit-out package: grinder, water filtration and accessories

The owner chose our full fit-out package. We put all the coffee equipment together as one set. We matched the grinder to the machine, the filter to the café’s water and how much of it they use, and the accessories to the way the team works at the bar.

The grinder matters as much as the machine. It decides whether the espresso extracts evenly, and in a café it works all day, for every single coffee. For the Appia we chose a white Eureka Olympus 75 NEO: 75 mm flat burrs, a 1.4 kg bean hopper and a colour that matches the machine. The water goes through a BRITA PURITY C300 kit with a filter head and flow meter. The filter limits limescale build-up in the machine and helps keep the water parameters consistent. The flow meter shows water use, which makes it easier to plan cartridge changes.

Coffee from our roastery: Captain’s Blend

The coffee in the Ma Ma Cafe grinder comes from our roastery near Kołobrzeg: Captain’s Blend. It is a dark roast with notes of walnut and dark chocolate and very low acidity.

It works well in milk drinks, and there are plenty of those on the Ma Ma Cafe menu. Its name and character also suit a seaside town like Świnoujście.

One day: from installing the machine to the first coffee

Our specialist came to Świnoujście with all the equipment. In the morning he installed the machine, connected it to the water supply through the filter and calibrated the pump, which means setting the pressure the espresso brews at. Training started straight after and went on until late in the evening.

After that one intense day, the café was ready to serve coffee. The team knew how to set the grind, pull an espresso, steam milk and handle the daily cleaning of the machine and grinder.

A few hundred coffees to get it right: the first weeks after opening

Being ready to work is not the same as having a routine. To get every order right, the baristas needed a few weeks and a few hundred coffees. In practice the hand learns to tamp, the ear learns the sound of steaming milk, and the eye quickly spots when an espresso runs too fast.

The results show in the reviews. Ma Ma Cafe has a Google rating of 4.9 from 130 reviews (as of October 2026). Google’s review summary highlights two things: warm blueberry buns straight from the oven and coffee from the Kołobrzeg roastery.

Ma Ma Cafe follows the seasons. In summer the star was the jagodzianka, a Polish blueberry bun that guests called the best in Świnoujście. In autumn it is cinnamon rolls, and we are already curious what will appear in the display in winter.

Alongside the espresso classics, the menu has affogato, espresso tonic, iced latte with ice cream and matcha latte, including mango and strawberry versions.
